Speedy Stuffed Squid

Never thought stuffed squid (sotong sumbat) is sooo easy to make. Recently, Fauzan & I have decided on a cooking schedule for dinner where each of us will take turn but usually Monday we'll do it together (actually, any other day it's just that the schedule is actually for us to decide what to cook because yes, deciding what to cook/eat is harder than preparing the meal itself). And then as usual i'll get creative on the menu because i think i really like cooking (but not baking) well, whenever i'm not lazy, that is.



Okay, here's my first recipe:
Speedy stuffed squid 
5 medium sized squids
2 medium sized shallots
2 cloves of garlic
An inch thin slice of ginger (i really don't know how to describe this: seinci halia, nipis)
A teaspoon of chilli flakes
2 pieces of cream cracker, crushed
1 egg
6 anchovies
A pinch of salt
A pinch of turmeric powder
Soy sauce for flavouring in egg or sauce, your call

Stuffing
Grind the shallots & garlic, use half of the mix with egg & crushed cream crackers. Add a pinch of salt & pepper. Make scrambled egg.

Stuffed squid
Stuff the raw squid with the scrambled egg, use toothpick to stick the head together. Add the anchovies to what's left of the grind shallots & garlics, grind again (or not) & sauté 'em (hahaha is that the correct way of saying it?). Once you smell the nice aroma, add about 1/3 cup of water, a pinch of salt, turmeric powder, teaspoon of chilli flakes, thin slices of ginger, a whoops-a-daisy of honey & once the sauce is boiling, put the squids in. Don't cook too long because the squids will get chewy. Add in sliced tomato or in my case, i used cherry tomatoes, sliced through. Flavour the sauce according to how you want it to taste.

DON'T FORGET TO COOK RICE BECAUSE IT'S GOOD WITH RICE YUM!

Chof Kukis

Chof kukis is soft chocolate cookies yang tak jadi (because it's wayyy chewy). I LOVE soft cookies and the easiest and most affordable cookies i can get is from Subway. However, i think it's great if i can bake my own, so i did. As you can see from the stories i posted on my blog (like, blogging last year's event, this year), that i am very busy dealing with life. So time is very precious and i like things that don't really take my time. Insert some mathematic biological formula, that, sort of equals to being lazy, heh. But you see, lazy people are good at doing things in a very limited time. We love the pressure!

Right.

So i searched on Pinterest "easy soft cookies recipe" and found this. Read through and it seemed easy which is true, it is easy! Tastes good but a bit too sweet for me (but one of my colleague said not sweet enough for her).
I replaced the chocolate chips with 3/5 Tango milk chocolate bar and added a little bit of raw peanuts. Gigih okay malam malam tumbuk kacang padahal tak raya puunn. However, actually, my cookies didn't turn out like the photos because as someone who bakes once in a blue moon, i was questioning why is my oven's temperature only up to 250 when in the recipe stated 350. After baking the first batch and discussing it with a friend, because the cookies didn't actually 'deflated' per recipe instruction, apparently i made a mistake thinking that 350 was for degree celsius, which is not because in the US they use fahrenheit instead. Bummer. Anyway, i'm gonna bake the left over dough because i was too tired and sleepy already (baked the cookies on a weeknight. So determined riiight), this time i'm gonna try make smaller balls. Wish me luck!

Had to use cupcake..cups(?) because i forgot to get the cookie sheet.
There's only one photo because i was really into baking this chof kukis. Also, i kinda suck at multitasking. Focus guys, concentration. Baking something you love, with love, for your loved ones. Hah!

Brunch at GRab Cafe

Sunday morning, I received a text from a high school friend (of a different school). An invitation I'd be stupid to refuse. A secluded cafe in Damansara Jaya, I like.

"You should try the rib set. It's heavy but of course you can tapao"
She managed to finish the whole thing except for the breads
(which she left in my car heheh)

He suggested for me to get the Benedicts but with beef bacon (not written on the menu) but I can have it with salmon if I want.
I said, "I want the salmon".

A kenyang college-mate, a confused high school friend from another high school & a very comfortable 'makcik'.

There's a lot to choose from, only that you can't choose on Mondays sebab close-lah. I think next time I'll try Lamb Bizkit, just because.
